The Split hotel 'Le Méridien Lav' and the Croatian Culinary Federation hosted the European WACS conference (World Association of Chefs' Societies) this past weekend.More than 60 European chefs talked about the rising awareness of proper food usage and reduction of waste food.
The food waste and safety project is a new WACS initiative, the aim of which is to eliminate the problem of waste food in restaurants and hotels.
WACS' members believe their eight million members throughout the world can help reduce the amount of waste food through the project.
One feature of the project will be donation of old, professional cooking equipment to WACS' members in poor countries.
It is usually thrown away but is high in quality and can help chefs in such countries.
